Sodium diacetate is white crystal, with acetic acid odor, hygroscopic, easily soluble in water, heating to 150ºC above decomposition, flammability, stable in cool and dry conditions. Sodium diacetate mainly relies on the decomposition of molecular acetic acid to play an antibacterial role, and it has good inhibitory ability to bacteria and mold.
